Salmon Baked in Foil


Preheat the oven 400 degrees.In a medium bowl, mix 2 Tablespoons olive oil, 1 Tablespoons lemon juice, 1 1/2 teaspoons chopped fresh or ¾ teaspoon dried oregano, 1/4 teaspoon dried thyme, 1/4 teaspoon salt, and ¼ teaspoon pepper.

Tear off sheets of aluminum foil large enough to wrap each piece of salmon individually. The above mixture of spices is enough for two servings. Double it if you need more.

In the center of each sheet of aluminum foil, spoon some of the spice mixture. Place a salmon fillet atop each sheet of foil and turn to coat with oil. Spoon the spice mixture over the salmon. Fold the sides of the foil over the fish, covering completely, and seal the packets closed.Place the foil packets on a baking sheet. (The salmon packets can be prepared up to this point 6 hours ahead. Refrigerate until ready to bake.)

Bake until the salmon is just cooked through, about 25 minutes. Using a spatula, transfer the foil packets to plates to serve. Or, unwrap and place the fish on each plate before serving.
