Place sweet potatoes (one per person should be enough) in a large pot and cover with water. Bring to a boil then turn the heat down and simmer until fork tender. Remove the potatoes from the water and let them cool.
While the potatoes are cooking, preheat the oven to 400 degrees and mix ¼ cup margarine, ½ cup orange juice, ½ cup brown sugar, and ¼ teaspoon salt in a small saucepan. Cook over medium heat until margarine is melted and sugar is dissolved.
Peel and slice the potatoes into ½ inch slices. Pour a little of the sauce in the bottom of an oblong baking dish. Place the slices in the baking dish and cover with the rest of the sauce. Make sure you pour slowly over the tops of each slice. Bake for 15 minutes or until juice mixture is bubbly.
