Lemon Butter Fish Fillets for Two

Preheat oven to 350 degrees.

Melt 1/4 cup butter in a medium saucepan. Add 1 Tablespoon lemon juice, 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon parsley flakes, and 1/4 teaspoon garlic powder. Simmer a few minutes.

Put 2 fish fillets in a casserole that has a lid. (or use an open baking dish and cover tightly with foil.)

Pour the butter mixture over the fish. Sprinkle evenly with lemon pepper. Cover and bake 20 minutes.

This is good with baked potatoes and French style green beans.
