Crispy Baked Chicken

Preheat oven to 375 degrees.

Melt 6 Tablespoons butter and pour in a bowl. Set it beside the kitchen sink.

Mix 2/3 cup dry instant mashed potatoes, ¼ teaspoon sea salt, and ¼ teaspoon lemon pepper or seasoning of your choice; pour in another bowl and set it beside the bowl of butter.

Cover the bottom of an oblong baking pan with the cooking oil; set it beside the other bowls.

Rinse 6-8 chicken tenders or 4 breasts in cold water, drain but do not pat dry.

Pick up a piece of chicken with a fork or tongs; dip the chicken, one piece at a time, into the bowl of butter, the dip it in the dry mixture, then lay it in the pan. Repeat with the other pieces.

Bake for 30 minutes or until chicken is no longer pink.

Good served with a baked potato and steamed broccoli, cauliflower, and carrots.
